Una torta americana


Da facebook, ieri, sono arrivata a questo blog: http://www.thecoersfamily.com, dove Amanda, mamma orgogliosa di sei bambini e in attesa del settimo per il prossimo febbraio, dà la ricetta di una torta che faceva  la sua tata Wanda Whiteley, donna eccezionale e gran cuoca.
La signora, nata subito dopo la grande depressione in una famiglia povera, non ha avuto vita facile. La salute cagionevole le aveva impedito di frequentare la scuola, che distava troppo dalla casa in cui abitava, così Wanda aveva imparato da sola a leggere e scrivere.Qualche anno prima di morire, nonostante una forte artrite che le procurava dolori alle mani quando scriveva,  aveva raccolto in un quadernetto a spirale tutte le sue ricette migliori per regalarlo ad Amanda, che lo tiene come un gran tesoro.
Amanda sa che Wanda sarebbe felice di sapere  che le sue ricette sono condivise ed apprezzate e quindi è orgogliosa di pubblicare questi tesori.

Buttermilk Pie made from scratch

Buttermilk Pie

Ingredients:
  • 1 large (9 inch) pie crust
  • 1/2 cup butter, softened
  • 2 cups sugar
  • 3 tablespoons of flour – Nanny wrote “rounded” so that mean slightly fuller scoops
  • 3 eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • Nutmeg – to dash on top
Preheat oven to 350. Prepare pie pan with pie crust.
Cream together butter and sugar.

Once fully combined and slightly fluffy, add flour and eggs.

Mix well. You can use a hand mixer for this, or beat with a fork until fully combined and smooth.

Stir in buttermilk and vanilla extract. Mix until fully incorporated. Pour into prepared pie crust. Dash nutmeg on top.

Bake for 1 hour and 15 minutes at 350 – or until done. A fork or toothpick inserted into the middle should come out cleanly. The pie will still be slightly jiggly after baking. Allow time to cool and set before serving, usually an hour at the very least.

It just doesn’t get more Southern than Buttermilk Pie. When you bite into this you need to be sure to say things like, “Shut yo’ mouth!” and “Mmm-mmm! Yes ma’am!” or perhaps even, “Oh my soul!”
